Embrace the hard stuff

Today is a snowy, sleeting and cold NC kind of day. So what does one do?

You go for a walk, of course! And if you are my hubby, you go Scottish style! Yep, he is in a kilt.

My man is the embodiment of his own slogan. “Embrace the hard stuff and you can enjoy life anywhere”. I will admit I enjoyed our walk in the winter air, but I did have to coax myself into going out the door.

Once outside, I embraced the hard and made up my mind to enjoy it. The cold wind and pelting sleet made me chant our motto in my head several times. I must say that knowing I am doing something outside the comfort zone of most makes me feel a little like a “bad ass”. In addition to my rise in self esteem; I got some pretty cool photos that otherwise I would have missed. Besides, fresh air is good for your health.

With that being said; look for more to come from me and the hubby on this subject of “Embracing the hard stuff” as we spend this year working on mobility, flexibility, eating habits and strength training. My smoking hot husband

Yep, today I’m talking about my hubby. So, why is this in the cooking section? Because he is smoking meat! Speaking my love language. I told you he was smoking hot. (Yes, I’m really that corny)

He is a pit master in the making! We have smoked all kinds of meat; chicken, duck, Boston butts and I’m sure I’m forgetting something. But it was all yummy!

We build a fire in the fire barrel and use only the coals in the smoker. Thus using the indirect heat to cook the meat; allowing the smoky flavor to penetrate the meat.

Often when we fire up the smoker it is an all night affair. He starts the fire, starts getting the smoker temp up and preps the meat. Then we put the meat on. We monitor the temp of the smoker mostly by feel but we also have a infrared thermometer to make sure we are good. We don’t want the temp too low and we don’t want it too high; either one brings it’s own set of challenges.

My hubby loves to cook and is very gifted in this area. I am blessed to be able to “test” his creations. Is there any wonder why I like the carnivore leaning eating style?
